Today is Monday. You would think if I am not working, I would have plenty of time to do everything I need to do. My day started at 5 am when I woke up the Staff Photographer. I had slept about 2 hours last night. I said I would just lie down a few seconds after I woke her up and I did not even hear the door close when the she left for school. 8 am came and my back was hurting. I have been trying not to use my pain medication as much and had not taken the tramadol last night. So, I got up and took the 10 medications I take as part of my home chemotherapy regime with the pain meds. I cleaned the house from top to bottom yesterday which is why my back was hurting. I had also worked our Shrimp and Suds Youth Fundraiser at St Peter’s Saturday night. These 2 activities were most likely why I was dragging today.
So what did I do? I decided to take Polo to the park for his walk. Even when I am tired, Polo needs to be walked. He does not care that my back hurts or that I feel wonky. So off to Frank Liske Park we went. The day was still young and cooler. The sky was clear and blue. It was not quite 80° yet so it was most pleasant. I did not walk for long before Polo did his thing and I walked a little longer before heading to Aldi. I needed to get Pico supplies because the SP is in a Foods class and has started to show an interest in the Kitchen. I went for tomatoes…TOMATOES!!! $65 later, I actually got the tomatoes and ingredients for 3 meals. Not to bad.
I like to make everything I can from scratch when possible. It is not that much more labor intensive and I like the challenge. For example, one of the SP’s favorite meals is Shrimp Alfredo. I had left over shrimp from the Shrimp and Suds event (thank you Lyn Holt, Youth Leader!!). Usually I make a rue with butter and flour and cook it until light nutty brown. I then add half and half ( sometimes cream or milk) and parm cheese and about a teaspoon of butter. Heart attack on a plate according to Karen Croxson but so good. Today, however was Monday so to the jar I went!!!! dadadaDAH!!! Now I could not just make pasta and dump the jar…no! I added a little parm cheese, a pinch of Italian herbs and a teaspoon of butter. Poured over pasta and adding shrimp. our Monday from a jar was complete.
Some days just come from a jar. Mondays can be like that!
